The perfect breakfast beverage, Paleo Chai Latte, made with warming Ayurvedic spices will keep you cozy during the cold weather. Sometimes I serve Paleo Chai Latte as a healthy snack in the afternoon, since it gives me a burst of real energy without any of the caffeine.

Speaking of caffeine, while many people on the paleo diet start their days off with bulletproof coffee, I do not. I haven’t had coffee since 1993. I think I had a headache for three days straight when I gave up coffee cold turkey a couple of decades ago. My body simply doesn’t tolerate caffeine. The silver lining of giving up coffee is my homemade Dandelion Root Coffee , my favorite coffee substitute beverage. In the winter I drink it almost every day, and a couple of times per week in the summer.

This Paleo Chai Latte is another great hot drink that’s similar to chai tea, or a chai latte! It’s packed with protein from eggs, and full of fabulous fat from coconut oil. If you are raw egg-phobic, the great thing about this paleo drink is that the boiling water poaches the eggs a bit. If you’re looking for a quick and easy, healthy breakfast recipe this is it!

Similar to a latte made with coffee, a chai latte is typically made with a tea concentrate and steamed milk. When I worked as a barista in college, the chai concentrate we used had enough sugar in it that it could sit on the counter for over a month without refrigeration. I wanted to figure out a healthier alternative to make at home to avoid that!

Chai lattes that are made with black tea do have some caffeine, but this particular recipe is caffeine-free because you get to skip the tea entirely. I personally don’t have the patience to wait for tea to brew, and then make a latte out of it, so this recipe gets its flavor from an easy combination of spices instead.

This recipe is quick and simple to make on the stove top, but if you want an extra-authentic drink that would come from a coffee house, you can use a milk frother (affiliate link) to heat the milk for this latter, or just to add a dollop of foam to the top, or you can vigorously whisk the milk over the stove to help make some foam without any extra equipment.

I’m not sure what prompted my obsession , but I was fascinated by this three-thousand-year-old holistic system of health, based on our individual compositions. It was the first time I really began to think that  maybe the ideal diet varies from person to person.

Ayurveda is an ancient system of medicine, considered the oldest, or one of the oldest, in the world. Its tenets include universal interconnectedness, knowing and treating body composition, and balancing your body’s composition, rather than treating the symptoms.

Me? I’m a pitta, through and through. If you knew me for five seconds you’d know I’m a pitta: a fiery Aries, ENTJ, type 4, type A+ go go go do do doer who lives in extremes. I run hot, flush easily, and crave spicy food daily. On top of that, I have a naturally muscular frame and tons of energy. So what does Ayurveda prescribe for me?

Well, at the core of it, I need to  balance the fieriness, the oiliness, the spiciness. It’s recommended for me to eat cold and soothing foods, to not over-consume spicy and very pungent foods, to soothe my inner wild woman. Ayurveda is  so  interesting and nourishing, and I really think you should learn more about it !
